Twitter apple party

I love Twitter Food Parties! This month’s theme is apples and I had so much fun with this one. I wanted to do something hearty so I made savory stuffed apples.
The apples are stuffed with tons of grilled bacon and onions, almonds, broccoli, and ricotta cheese. I cooked the bacon and onions before mixing everything together to make sure they got fully cooked. When the mixture baked in the apples the apple juice seeped in and really brightened the flavor.

I really love the texture combination here too with the almonds... heaven! The best bites have a big apple chunk with a scoop of filling so that you taste everything together.
I obviously had to hollow out the apples so I used all of the bits and made an apple coleslaw. That way we got to have cold crisp and bright apple slaw and the savory baked apple.
All of this apple fantastic-ness was paired with some mushroom herb couscous.
